24 oz of room temperature of rich simple syrup (2 parts sugar to 1 part mint stock water)
When you start the water to boil you’re gonna dump whatever mint shake we have and all the yucky mint and stalks that you have from picking mint for this syrup. As soon as the water starts to boil, skim all the mint pieces. Then proceed with blanching the mint as detailed below. When that process is done use the boiling water to make your rich simple syrup made from the mint water. Make enough for multiple batches of mint syrup.
14-15 sprigs of mint
Blanch mint in boiling water for 15 seconds. Put the mint into an ice bath immediately to cool down for 1 minute. I find it best to make the ice bath and then strain the ice off right before I blanch the mint. Makes getting the mint out of the water much easier. Place each individual mint leaf on a linen and then place another linen over the top to help them dry. Dry the mint as much as possible. Blend in vitamix with room temperature rich simple syrup for 1 minute on high. Strain. Refrigerate.
