6 cups water/3 cups sugar/8 oz chopped and peeled ginger/70 crushed all spice berries/35 whole cloves/1/2 tsp almond extract/1/2 tsp vanilla extract/100 ml fresh lime juice/160 ml silver rum
For the almond extract I do use orgeat.
You can double this recipe and it tastes the same.
Make simple syrup and leave boiling. Add ginger, all spice and cloves. Simmer for 30 minutes. Cool for 40 minutes. Strain. Add extracts, lime juice and rum. Strain through a cheese cloth. Keep refrigerated.
