350ml green chartreuse
350 ml yellow chartreuse
100 ml cask Armagnac (have been using L'Encantada XO)
100 ml calvados (prefer Roger Groult 3 year)
100 ml aged rum (love somethng with a little richness and sweetness to it)
100 ml Jamaican high proof rum (I am a big Worthy Park fan)
24 eggs
680 g sugar
10 g salt
Mix eggs and sugar in a kitchen aid mixer on low until fully incorporate
Add booze slowly
Add salt
Mix until incorporated
Strain through a chinois
42 oz half and half
28 oz water
